A Foodie at heart..
I don’t only love eating, but also love cooking and baking among other things that I feel are real therapy for me. So I wanted to share some of my to go recipes or most favorite ones. Hope you enjoy them as much as I do.
Egg Bake
2 Eggs
1/2 cup Sharp cheddar cheese
1/2 cup Cottage cheese
Chopped green onions
1 Tbsp Butter
Sautee the green onions in the butter, set aside. Whisk the eggs and add the rest of the ingredients, including the sauteed onions. Pour on a small oven safe container and bake at 350 F for about 35 mins. I make it on my countertop oven for convenience. ;)
Conchas in Bread Maker
Yields about 12
For the bread
3/4 cup evaporated milk
2 eggs
70 grams butter
1 tsp vanilla
450 grams bread flour
85 grams sugar
1 tsp cinnamon
1 tsp active dry yeast
For the topping
1/2 cup butter (softened)
2/3 cup all purpose flour
1 cup sugar
1 tsp vanilla
Place ingredients for the bread in your bread maker in the order listed whisking the eggs a little bit with the milk. Set your bread maker to the dough cycle and wait for the cycle to be done. In the meantime prepare the topping by mixing all ingredients for the topping together and dividing it into 12 equal balls. Remove the dough from the bread maker and place it in a clean surface where you can divide it into 12 without manipulating it too much and making balls and placing them in a baking tray, keep in mind they will rise and grow to about twice it;s original size so leave enough space in between them. I like to weigh mine, 80 grams for each concha. Press the topping balls as if you were going to make tortillas with them, large enough to cover your bread balls, score the topping and let them proof for about 2 hours.
Bake at 350 F for about 18-20 minutes.
Enjoy with a cup of coffee or a chocolate caliente ;)
Maple Pecan Granola
4 cup rolled oats
1 cup pecans (roughly chopped)
1/2 cup light flavor oil, (I use grape seed)
1/2 cup maple syrup
1 tsp vanilla
Place oil and maple syrup in a bowl and mix to try to Integrate them. In a larger bowl, mix oats and pecans, add the maple oil mix to it and mix everything very well, I like doing it with my hands to make sure every oat flake and pecan piece is completely coated. Line a baking pan with parchment paper and layer the mixture on it.
Bake at 325 F for about 15 minutes, take it out and stir and the bake for another 10 mins. If you want your granola to crumble skim the stirring step.
